Creamy Pea Pasta Salad

Ingredients

  • 1 cup of pasta
  • 2 tablespoon spring onions
  • 3 tablespoon of oil
  • 1 avocado
  • 1 small glove of garlic
  • handful of parsley or spinach
  • 1/2 tsp salt + pepper
  • 2 tablespoon of peas
  • 6-8 small tomatoes

Preparation

  1. Cook the pasta for 8-10 minutes

  2. In a food processor place spring onions, oil, avocado, garlic, parsley or spinach, salt and pepper

  3. Mix well until you have a creamy texture

  4. Set aside and slice the tomatoes and cook on a pan with olive oil for a few minutes until soft

  5. Add the avocado cream on top of the pasta, stir well

  6. Serve the pasta with peas, sliced radishes, warm tomatoes, salt & pepper
