Creamy Vegan Chocolate Cookie Dough
Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup nut butter
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 70g silken tofu or 1/4 package or 2-3 tbs vegan yogurt
- 3 tbs maple syrup or liquid sweetener
- 1 large medjool date or 1 tbs coconut sugar
- splash plant based milk
- 1/3 cup vegan dark chocolate chunks or cacao nibs
Optional
- 1/3 cup rolled oats ground into flour to thicken
Preparation
Drain and rinse the chickpeas.
Blend chickpeas with nut butter, cinnamon, vanilla, silken tofu or vegan yogurt, maple syrup or sweetener, and date or sugar in a food processor until smooth.
Add a splash of plant-based milk to adjust consistency if needed.
Stir in the chocolate chunks or cacao nibs.
If using optional oats, mix in to thicken the dough.
