Curried Fried Rice with Butternut Squash and Vegetables

Ingredients

  • some frozen butternut squash
  • peppers
  • peas
  • onions
  • splash of oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne or chilli powder
  • 1/2 teaspoon turmeric
  • 1 cup cooked basmati rice
  • black pepper

Preparation

  1. Boil some frozen butternut squash until tender.

  2. While the squash is boiling, fry peppers, peas, and onions in a splash of oil.

  3. Add 1 tablespoon soy sauce, 1/2 teaspoon cumin, 1/2 teaspoon ground coriander, 1/4 teaspoon cayenne or chilli powder, and 1/2 teaspoon turmeric to the frying pan.

  4. Fry the mixture until the vegetables are softened, adding water if it dries up.

  5. Add 1 cup of cooked basmati rice and the drained butternut squash to the pan.

  6. Mix everything together and season with black pepper.
