Curried Fried Rice with Butternut Squash and Vegetables
Ingredients
- some frozen butternut squash
- peppers
- peas
- onions
- splash of oil
- 1 tablespoon soy sauce
- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne or chilli powder
- 1/2 teaspoon turmeric
- 1 cup cooked basmati rice
- black pepper
Preparation
Boil some frozen butternut squash until tender.
While the squash is boiling, fry peppers, peas, and onions in a splash of oil.
Add 1 tablespoon soy sauce, 1/2 teaspoon cumin, 1/2 teaspoon ground coriander, 1/4 teaspoon cayenne or chilli powder, and 1/2 teaspoon turmeric to the frying pan.
Fry the mixture until the vegetables are softened, adding water if it dries up.
Add 1 cup of cooked basmati rice and the drained butternut squash to the pan.
Mix everything together and season with black pepper.
