Turmeric Rice and Veggie Burger Bowl
Ingredients
- 1 cup Jasmine rice
- 1 teaspoon turmeric
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon basil
- 1/2 teaspoon garlic powder
- 2 grilled piquillo peppers, chopped
- 1/3 cup peas
- 1 1/2 cups water
- 1 veggie burger (store-bought)
- Red pepper hummus (to taste)
Preparation
Combine all rice ingredients, bring to a boil, then reduce to a simmer for 15 minutes. Allow to rest for an additional 5 minutes.
Cook the veggie burger according to package directions.
Assemble the bowl by layering rice, veggie burger, and red pepper hummus.
