Green Rice Recipe
Ingredients
- 1 cup uncooked white rice
- 1 tbsp avocado oil
- 1/2 cup chopped white or yellow onion
- 3 garlic cloves, minced
- 1 pinch sea salt
- for the green mix:
- 1 3/4 cup water (or sub broth of choice for more flavour)
- 1 small jalapeño pepper, seeds and stems removed & chopped
- 2 cups cilantro
- 1/2 tsp sea salt
- 1 tbsp spiraveg fresh spirulina
Preparation
Add water, pepper, cilantro and sea salt to a blender and blend on high for 30 second until fully combined
Set aside
Heat a large saucepan over medium heat
Once hot, add avocado oil, onion, garlic and a healthy pinch of sea salt
Sauté until tender, approx
Minutes
Then add rice and begin toasting, stirring occasionally for 2-3 minutes
Slowly add the green mix from the blender to the pan and stir to fully combine - it should just cover the rice
Increase heat to high until the mixture reaches a low boil, then reduce to simmer, cover and set a timer for 18 minutes
Once all the liquid is absorbed, turn off heat and let sit for 10 minutes
Let cool then top with lime, cilantro and fresh spirulina
