Green Rice Recipe

Ingredients

  • 1 cup uncooked white rice
  • 1 tbsp avocado oil
  • 1/2 cup chopped white or yellow onion
  • 3 garlic cloves, minced
  • 1 pinch sea salt
  • for the green mix:
  • 1 3/4 cup water (or sub broth of choice for more flavour)
  • 1 small jalapeño pepper, seeds and stems removed & chopped
  • 2 cups cilantro
  • 1/2 tsp sea salt
  • 1 tbsp spiraveg fresh spirulina

Preparation

  1. Add water, pepper, cilantro and sea salt to a blender and blend on high for 30 second until fully combined

  2. Set aside

  3. Heat a large saucepan over medium heat

  4. Once hot, add avocado oil, onion, garlic and a healthy pinch of sea salt

  5. Sauté until tender, approx

  6. Minutes

  7. Then add rice and begin toasting, stirring occasionally for 2-3 minutes

  8. Slowly add the green mix from the blender to the pan and stir to fully combine - it should just cover the rice

  9. Increase heat to high until the mixture reaches a low boil, then reduce to simmer, cover and set a timer for 18 minutes

  10. Once all the liquid is absorbed, turn off heat and let sit for 10 minutes

  11. Let cool then top with lime, cilantro and fresh spirulina
