Delicious Energy Regulating Savoury Breakfast Salad

Ingredients

  • 2 small sweet potato or 1 large sweet potato cut into discs
  • 1 Tbsp avocado or coconut oil (or sub water if avoiding oil)
  • 1 pinch each salt and pepper
  • 3 tbsp lemon juice
  • 1 medium ripe avocado
  • 2 tbsp hemp seeds
  • 1 cup blueberries or any seasonal fruit

Preparation

  1. Roast the sweet potatoes with a drizzle of oil in the oven for 40 minutes or until caramelised.

  2. Serve with all the fresh ingredients, lots of greens, and drizzle with almond butter for added flavor.
