Delicious Energy Regulating Savoury Breakfast Salad
Ingredients
- 2 small sweet potato or 1 large sweet potato cut into discs
- 1 Tbsp avocado or coconut oil (or sub water if avoiding oil)
- 1 pinch each salt and pepper
- 3 tbsp lemon juice
- 1 medium ripe avocado
- 2 tbsp hemp seeds
- 1 cup blueberries or any seasonal fruit
Preparation
Roast the sweet potatoes with a drizzle of oil in the oven for 40 minutes or until caramelised.
Serve with all the fresh ingredients, lots of greens, and drizzle with almond butter for added flavor.
