Extra Creamy Classic Hummus

Ingredients

  • 2 cans (15 oz) organic chickpeas
  • 1/2 to 1 cup good quality tahini
  • Juice from one large lemon
  • Chickpea juice from the can
  • 3-4 cloves garlic
  • 1-2 tsp salt
  • 1 tsp pepper

Garnishes

  • Chopped purple onions
  • Roasted chickpeas
  • Cherry tomatoes
  • Parsley
  • Lemon wedges
  • Crushed red pepper

Preparation

  1. Drain one can of chickpeas and reserve the water from the second can.

  2. Blend all ingredients until smooth and creamy.

  3. Plate the hummus in a shallow bowl.

  4. Decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.

  5. Serve with warm pita bread.

Notes

  1. Adjust tahini amount for desired creaminess; use 1 cup for extra creamy or less for thicker consistency.

  2. Salt can be adjusted to taste.
