Garlic Veggie Rotini Pasta
Ingredients
- 2 tablespoons oil
- 2 cups mushrooms (150 g), sliced
- 2 cups broccoli (500 g), chopped
- 4 cloves garlic, chopped
- 2 bell peppers, sliced
- 1 tablespoon dried oregano
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 1/4 cups rotini pasta (250 g)
Preparation
Cook the rotini pasta according to package instructions until al dente.
In a large skillet or pot, heat the oil over medium heat.
Add the garlic, mushrooms, broccoli, and bell peppers; sauté until the vegetables are tender.
Stir in the oregano, salt, and pepper to combine.
Add the cooked pasta to the skillet and toss everything together until well mixed.
Serve immediately for best flavor and texture.
