Gluten-Free Pearl Millet Spinach Pancake

Ingredients

  • 1.5 cups pearl millet flour
  • 1/2 cup chopped spinach
  • 1/2 cup chopped coriander
  • Green chilies
  • Ginger
  • Garlic
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon carom seeds
  • Turmeric powder
  • Red chili powder
  • Coriander powder
  • 1/2 cup yogurt
  • Salt
  • 1/2 teaspoon baking soda
  • Water as needed
  • Oil or ghee for cooking

Preparation

  1. Combine pearl millet flour, chopped spinach, chopped coriander, green chilies, ginger, garlic, sesame seeds, carom seeds, turmeric powder, red chili powder, coriander powder, yogurt, salt, and baking soda in a bowl.

  2. Mix all ingredients well and add water as required to form a thick batter.

  3. Heat a skillet over medium heat and add oil or ghee.

  4. Pour the batter onto the skillet to form pancakes and cook until golden brown on both sides.

  5. Optionally, sprinkle additional sesame seeds on top while cooking.

  6. Serve with yogurt or chutney.

Notes

  1. Fenugreek leaves can be used instead of spinach.

  2. This recipe is gluten-free and beneficial for weight loss and diabetes management.
