Green Goddess Chickpea Salad Wrap

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 celery stalks, finely chopped
  • 2 green onions, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup dill pickles, finely chopped
  • 1/4 cup packed fresh basil
  • 1/4 cup fresh parsley
  • 1/4 cup vegan mayonnaise
  • 1/4 cup vegan sour cream
  • 2 tablespoons water
  • 2 tablespoons tahini
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • Sea salt and black pepper, to taste

Preparation

  1. Mash chickpeas in a mixing bowl using a potato masher or the back of a fork. Add the chopped celery, green onions, pickles, and garlic, then mix well

  2. In a blender, combine the remaining ingredients and blend until smooth

  3. Add the dressing to the chickpea mixture and stir until well combined

  4. Spread the mixture onto lavash wraps, top with waffle-cut cucumbers, and roll up to serve
