Grilled Plantains with Spicy Mango Salsa
Ingredients
- 1 yellow plantain
- 1/2 tablespoon avocado oil
- pink sea salt
- 1 mango
- 1/2 yellow bell pepper
- 1/4 yellow onion
- 1 garlic clove
- 1 tiny slice habanero pepper
- 1 tablespoon cilantro
- 1 tablespoon parsley
- sea salt
- cayenne pepper (optional)
Preparation
Slice the plantain into 1/2 inch rounds.
Grill the plantain slices on a grill pan with 1/2 tablespoon avocado oil and pink sea salt.
Chop the mango, yellow bell pepper, yellow onion, garlic clove, habanero pepper slice, cilantro, and parsley.
Blend all chopped salsa ingredients in a food processor until chunky, not too watery, and season with sea salt and optional cayenne pepper.
