Grilled Plantains with Spicy Mango Salsa

Ingredients

  • 1 yellow plantain
  • 1/2 tablespoon avocado oil
  • pink sea salt
  • 1 mango
  • 1/2 yellow bell pepper
  • 1/4 yellow onion
  • 1 garlic clove
  • 1 tiny slice habanero pepper
  • 1 tablespoon cilantro
  • 1 tablespoon parsley
  • sea salt
  • cayenne pepper (optional)

Preparation

  1. Slice the plantain into 1/2 inch rounds.

  2. Grill the plantain slices on a grill pan with 1/2 tablespoon avocado oil and pink sea salt.

  3. Chop the mango, yellow bell pepper, yellow onion, garlic clove, habanero pepper slice, cilantro, and parsley.

  4. Blend all chopped salsa ingredients in a food processor until chunky, not too watery, and season with sea salt and optional cayenne pepper.
