Ground Turkey Zucchini Boats
Ingredients
- Zucchinis
- Ground turkey or other protein (e.g., chicken, beef, lentils)
- Onions
- Tomato sauce
- Seasonings
- Cheese (e.g., mozzarella)
- Avocado crema or other toppings (optional)
Preparation
Cut the zucchinis in half lengthwise and scoop out the center, setting it aside.
Cook the chosen protein with the zucchini pulp, onions, tomato sauce, and desired seasonings.
Stuff the zucchini halves with the cooked mixture.
Add cheese on top and bake in a preheated oven at 350°F for about 35 minutes or until desired softness.
Add avocado crema, sour cream, salsa, or other toppings and serve.
Tips
Serve with a salad or cauliflower rice for a complete meal.
