Easy Keto Cinnamon Rolls
Ingredients
Dough
- 120 g grated mozzarella
- 40 g coconut flour
- 85 g cream cheese
- 1 egg
- 1 teaspoon baking powder
- 40 g powdered erythritol
Cinnamon filling
- 40 g soft butter
- 30 g brown erythritol
- Cinnamon
Icing
- 3 tablespoons cream cheese
- 10 g melted butter
- 1 tablespoon erythritol
- Some lemon juice
Preparation
Preheat oven to 180 degrees Celsius fan-assisted
Melt mozzarella and cream cheese in microwave for 15 seconds, repeat three times while stirring in between, and mix well after 45 seconds
Stir in all other dough ingredients and knead with hands
Roll out dough between two baking papers to 0.5 cm thick
For the filling, mix soft butter, cinnamon, and brown erythritol together and spread on the dough; if butter is too hard, soften it briefly in the microwave
Roll up the dough lengthwise and cut into 3 cm thick slices
Place the rolls in a baking dish and bake for about 10 minutes until golden brown
Meanwhile, mix all icing ingredients together and drizzle over the cinnamon rolls later
Tips
Eat immediately while warm as the cheese hardens when cool; if there are leftovers, reheat briefly in the microwave the next day
