Fluffy Chocolate Banana Cinnamon Rolls

Ingredients

  • 1 3/4 cups Kodiak Cakes gluten-free pancake mix
  • 1 egg
  • 1 small ripe banana
  • 2 tbsp melted butter (such as Miyoko's Creamery butter)
  • 2 tbsp coconut sugar
  • 1 1/2 tsp cinnamon
  • Chocolate chips or chunks (such as Jojo's Chocolate)

Preparation

  1. In a bowl, stir together the pancake mix, egg, and ripe banana.

  2. Place the dough on a lightly floured surface and roll it out into a rectangle.

  3. Spread the melted butter evenly over the dough.

  4. Sprinkle the coconut sugar, cinnamon, and chocolate chips or chunks over the dough.

  5. Roll up the dough tightly, starting from one of the longer sides.

  6. Cut the rolled dough into four equal-sized cinnamon rolls.

  7. Place the cinnamon rolls in a microwave-safe bowl.

  8. Microwave the cinnamon rolls for 1 minute and 20 seconds.

  9. Remove from the microwave and let them cool slightly.

  10. Optional: Top the cinnamon rolls with a mix of Greek-style yogurt and powdered sugar.
