Healthy Choc Mint Protein Panna Cotta

Ingredients

  • 400g coconut yoghurt
  • Equivalent of 2 Tbsp sweetener (stevia, maple, rice syrup etc)
  • 1 Tbsp cacao powder
  • 1 tsp peppermint extract (optional) to taste
  • 2 tsp agar powder
  • 100ml water

Preparation

  1. Blend yoghurt, sweetener, peppermint and cacao until smooth and taste and adjust to taste as required

  2. In a saucepan, dissolve the agar in the water and bring to the boil

  3. Reduce to a simmer, and stir for a couple of minutes until dissolved

  4. Pour into the yoghurt mix and blend quickly

  5. Pour into silicon molds, glasses or lightly greased ramekins and allow to set in the fridge for 2 hours

  6. Enjoy
