Healthy Choc Mint Protein Panna Cotta
Ingredients
- 400g coconut yoghurt
- Equivalent of 2 Tbsp sweetener (stevia, maple, rice syrup etc)
- 1 Tbsp cacao powder
- 1 tsp peppermint extract (optional) to taste
- 2 tsp agar powder
- 100ml water
Preparation
Blend yoghurt, sweetener, peppermint and cacao until smooth and taste and adjust to taste as required
In a saucepan, dissolve the agar in the water and bring to the boil
Reduce to a simmer, and stir for a couple of minutes until dissolved
Pour into the yoghurt mix and blend quickly
Pour into silicon molds, glasses or lightly greased ramekins and allow to set in the fridge for 2 hours
