Mango Edamame Kale Bowl
Ingredients
- 1 bunch lacinto kale
- 2 tablespoons lemon juice
- 1 teaspoon extra virgin olive oil
- 1/2 cup edamame
- 1 orange bell pepper
- 1/2 English cucumber
- 1 small yellow mango
- 1/2 bunch cilantro
- 1 avocado
- 1 package miracle noodle spaghetti
Sweet and spicy garlic sauce
- 1 tablespoon chili garlic sauce or Sriracha
- 1 lime, juiced
- 1 tablespoon agave
- 1 tablespoon rice vinegar
- 1 tablespoon coconut aminos
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon sesame seeds
Preparation
Place kale in a bowl and massage until tender.
Prepare other vegetables and arrange them atop the kale.
Bring a small pot of water to a boil and add miracle noodles. Reduce heat and simmer for 5-7 minutes until desired tenderness is reached.
Meanwhile, combine all ingredients for the sauce. Drain the noodles and immediately toss them with the sauce to coat. Add to the bowl.
Add an extra squeeze of lime if desired and enjoy.
Notes
This recipe serves 2 and is ready in 10 minutes with minimal cleanup.
