Next Level Sourdough Avocado Toast with Tofu Scramble
Ingredients
- sourdough bread
- avocado
- mushrooms
- cherry tomatoes
- Tamari sauce
Tofu scramble
- 1/2 tablespoon olive oil
- 8 ounces firm tofu
- 1 tablespoon nutritional yeast
- 1/2 teaspoon salt
- 1/8 teaspoon turmeric
- 1/8 teaspoon garlic powder
- 1 tablespoon unsweetened unflavored non-dairy milk
Preparation
Heat the olive oil in a pan over medium heat. Mash the block of tofu right in the pan with a potato masher or a fork, or crumble it into the pan with your hands. Cook, stirring frequently, for 3-4 minutes until the water from the tofu is mostly gone
Add the nutritional yeast, salt, turmeric and garlic powder. Cook and stir constantly for about 5 minutes
Pour the non-dairy milk into the pan and stir to mix
While the tofu scramble is cooking, heat a small pan over medium heat. Add a little oil and the mushrooms. Cook until tender, about 5 minutes. Add Tamari sauce and cook for 1 minute
Toss the cherry tomatoes with a little oil and salt. Roast in a pan over medium heat, stirring occasionally, until softened, about 10 minutes
Toast the sourdough bread until golden
Mash the avocado in a bowl until smooth
Assemble the toast: spread mashed avocado on the toasted bread. Top with tofu scramble, Tamari mushrooms, and roasted tomatoes
