Next Level Sourdough Avocado Toast with Tofu Scramble

Ingredients

  • sourdough bread
  • avocado
  • mushrooms
  • cherry tomatoes
  • Tamari sauce

Tofu scramble

  • 1/2 tablespoon olive oil
  • 8 ounces firm tofu
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon salt
  • 1/8 teaspoon turmeric
  • 1/8 teaspoon garlic powder
  • 1 tablespoon unsweetened unflavored non-dairy milk

Preparation

  1. Heat the olive oil in a pan over medium heat. Mash the block of tofu right in the pan with a potato masher or a fork, or crumble it into the pan with your hands. Cook, stirring frequently, for 3-4 minutes until the water from the tofu is mostly gone

  2. Add the nutritional yeast, salt, turmeric and garlic powder. Cook and stir constantly for about 5 minutes

  3. Pour the non-dairy milk into the pan and stir to mix

  4. While the tofu scramble is cooking, heat a small pan over medium heat. Add a little oil and the mushrooms. Cook until tender, about 5 minutes. Add Tamari sauce and cook for 1 minute

  5. Toss the cherry tomatoes with a little oil and salt. Roast in a pan over medium heat, stirring occasionally, until softened, about 10 minutes

  6. Toast the sourdough bread until golden

  7. Mash the avocado in a bowl until smooth

  8. Assemble the toast: spread mashed avocado on the toasted bread. Top with tofu scramble, Tamari mushrooms, and roasted tomatoes
