One-Minute Smacked Cucumber Salad

Ingredients

  • 1 cucumber
  • 3 sliced radishes
  • Handful of fava beans
  • Handful of chopped coriander

Dressing

  • 1 tablespoon protein peanut butter powder
  • 2 teaspoons chilli oil
  • 1 teaspoon hot water
  • 1 teaspoon rice vinegar
  • 1.5 teaspoons soy sauce
  • Squeeze of lemon

Preparation

  1. Slice the cucumber into sticks.

  2. Add the sliced radishes and chopped coriander.

  3. In a bowl, combine the dressing ingredients and mix well. Adjust to taste.

  4. Pour the dressing over the salad and finish with a handful of fava beans or peanuts or edamame.
