One-Minute Smacked Cucumber Salad
Ingredients
- 1 cucumber
- 3 sliced radishes
- Handful of fava beans
- Handful of chopped coriander
Dressing
- 1 tablespoon protein peanut butter powder
- 2 teaspoons chilli oil
- 1 teaspoon hot water
- 1 teaspoon rice vinegar
- 1.5 teaspoons soy sauce
- Squeeze of lemon
Preparation
Slice the cucumber into sticks.
Add the sliced radishes and chopped coriander.
In a bowl, combine the dressing ingredients and mix well. Adjust to taste.
Pour the dressing over the salad and finish with a handful of fava beans or peanuts or edamame.
