Pesto-ey Grain Bowl with Hot-Smoked Salmon

- 100g baby rocket
- 250g cherry tomatoes
- 185g peppered hot-smoked salmon
- Avocado
- Fresh basil leaves
- Lemon juice
Preparation
Heat the grains according to pouch instructions.
Halve the cherry tomatoes
Flake the hot-smoked salmon
Slice the avocado
Combine the heated grains with 100g baby rocket, halved cherry tomatoes, and flaked salmon.
Serve on a sharing plate and top with sliced avocado, fresh basil leaves, and a squeeze of lemon juice.
