Pesto-ey Grain Bowl with Hot-Smoked Salmon

Ingredients

  • Grains
  • 100g baby rocket
  • 250g cherry tomatoes
  • 185g peppered hot-smoked salmon
  • Avocado
  • Fresh basil leaves
  • Lemon juice

Preparation

  1. Heat the grains according to pouch instructions.

  2. Halve the cherry tomatoes

  3. Flake the hot-smoked salmon

  4. Slice the avocado

  5. Combine the heated grains with 100g baby rocket, halved cherry tomatoes, and flaked salmon.

  6. Serve on a sharing plate and top with sliced avocado, fresh basil leaves, and a squeeze of lemon juice.
