Spicy Pan-Fried Salmon with Kale Caesar Salad
Ingredients
- 1/2 cup mayonnaise
- 2 anchovies
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 2 garlic cloves
- juice of 1/2 lemon
- kale
- 1/2 avocado
- black pepper
- salmon fillets
- Cajun seasoning
- olive oil
Preparation
Blend 1/2 cup mayonnaise with 2 anchovies, 1 tablespoon red wine vinegar, 1 teaspoon Dijon mustard, 2 garlic cloves, and juice from 1/2 lemon to make the dressing.
Wash and chop the kale, then top it with the dressing, 1/2 cubed avocado, and black pepper.
Pat dry the salmon fillets and season with Cajun seasoning.
Heat olive oil in a skillet over medium-high heat.
Once the oil is hot, add salmon pieces skin side up and cook for 4 minutes.
Flip the salmon and cook for another 3 minutes.
