Spicy Pan-Fried Salmon with Kale Caesar Salad

Ingredients

  • 1/2 cup mayonnaise
  • 2 anchovies
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves
  • juice of 1/2 lemon
  • kale
  • 1/2 avocado
  • black pepper
  • salmon fillets
  • Cajun seasoning
  • olive oil

Preparation

  1. Blend 1/2 cup mayonnaise with 2 anchovies, 1 tablespoon red wine vinegar, 1 teaspoon Dijon mustard, 2 garlic cloves, and juice from 1/2 lemon to make the dressing.

  2. Wash and chop the kale, then top it with the dressing, 1/2 cubed avocado, and black pepper.

  3. Pat dry the salmon fillets and season with Cajun seasoning.

  4. Heat olive oil in a skillet over medium-high heat.

  5. Once the oil is hot, add salmon pieces skin side up and cook for 4 minutes.

  6. Flip the salmon and cook for another 3 minutes.
