Roasted Sweet Potatoes with Coconut Oil and Ginger
Ingredients
- Sweet potatoes (jewel and purple varieties)
- 1 1/2 tablespoons coconut oil
- 1 teaspoon ginger
- Sea salt to taste
- 1 tablespoon coconut or liquid aminos (optional)
Preparation
Toss the sweet potatoes with coconut oil, ginger, sea salt, and optional aminos for extra flavor.
Roast at 375 degrees Fahrenheit for 30-35 minutes until crispy on the edges and soft in the middle.
Add to lunches or snack on them directly as a healthy alternative to junk food.
