Roasted Sweet Potatoes with Coconut Oil and Ginger

Ingredients

  • Sweet potatoes (jewel and purple varieties)
  • 1 1/2 tablespoons coconut oil
  • 1 teaspoon ginger
  • Sea salt to taste
  • 1 tablespoon coconut or liquid aminos (optional)

Preparation

  1. Toss the sweet potatoes with coconut oil, ginger, sea salt, and optional aminos for extra flavor.

  2. Roast at 375 degrees Fahrenheit for 30-35 minutes until crispy on the edges and soft in the middle.

  3. Add to lunches or snack on them directly as a healthy alternative to junk food.
