Simple Gluten-Free Pumpkin Bread
Ingredients
- 1 3/4 cups of @kingarthurflour measure for measure flour (can be regular)
- 1 tsp baking soda
- 2 tsp @mccormickspice cinnamon
- 1/4 tsp ground cloves
- 3/4 tsp salt
- 2 eggs at room temp
- 3/4 cups sugar
- 1/2 cup brown sugar
- 1 1/2 pumpkin purée
- 1/2 cup vegetable or coconut oil
- 1/4 cup milk (or orange juice if you feel fun)
- 2/3 cups semi sweet chocolate chips
Preparation
Preheat the oven to 350°F
Combine dry ingredients in one bowl.
In another bowl whisk eggs and sugars until combined.
Then add pumpkin, oil and milk.
Mix wet and dry ingredients and mix in chocolate until just combined.
Bake at 350 for 60-65 minutes in a 9x5 loaf pan or two 8x3 inch pans.
If the top starts to brown too much, tent with foil around the 40 minute mark.
