Pumpkin Oatmeal Chocolate Chip Cookies
Ingredients
- 2 cups and 1 tablespoon gluten-free flour
- 1 teaspoon baking soda
- 4 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups old-fashioned oats
- 1 cup unsalted butter, melted
- 3 tablespoons maple syrup
- 3/4 cup brown sugar
- 1/2 cup sugar
- 3/4 cup pumpkin purée
- 1 egg yolk
- 2 teaspoons vanilla
- 1 1/2 cups milk chocolate chips
Preparation
Preheat oven to 350 degrees Fahrenheit.
Whisk flour, baking soda, cinnamon, salt and oats in a large bowl.
Whisk together the rest of the ingredients in a separate bowl and combine, ending with the chocolate chips.
Spoon around 1.5 tablespoon cookie dough balls on a lined cookie sheet.
Bake for 12-13 minutes or until the edges are brown.
Wait to cool before eating as they will seem very soft and chewy.
