Simple Vegan Cinnamon Buns
Ingredients
Dough
- 300 g flour (2 cups + 2 tbsp)
- 1/3 cup plant-based milk
- 1/3 cup warm water + 1 tbsp sugar
- 1/3 cup vegan butter
- 1 package yeast
- 1 tsp salt
Filling
- 1/3 cup vegan butter
- 2 tbsp sugar
- 1-2 tbsp almond flour
- 2 tbsp cinnamon
Toppings
- maple syrup
- pearl sugar or almonds
Preparation
Add the yeast to the warm water and add 1 tablespoon of sugar. Let it activate for about 10 minutes.
Combine flour with salt in a large bowl. Add the yeast mixture, sugar, plant-based milk, and vegan butter, then stir until dough is formed.
Transfer the dough to a working surface and knead by hand for about 10 minutes. Then place the dough ball into a greased bowl, cover with a towel, and let it rise until doubled in size, about 1 hour.
Prepare the filling by combining softened vegan butter, sugar, almond flour, and cinnamon, and mix.
On a lightly floured surface, roll out the dough into a thin rectangle and spread the cinnamon paste all over it.
Fold the dough and cut it into long strips about 1 cm wide using a sharp knife.
Twist each strip to resemble a rope, then roll it up and twist to form a knot, tucking the loose end underneath.
Place the knots on a baking sheet, cover with a towel, and set aside to rise for 30 minutes.
Preheat the oven to 180°C (350°F). Brush the buns with maple syrup and sprinkle with pearl sugar or almonds.
Bake for 12-15 minutes. Enjoy!
