Spiced Puy Lentil and Carrot Fritters

Ingredients

  • 1 large carrot
  • 125g Merchant Gourmet Puy Lentils
  • 1 tbsp plain flour
  • 1 tsp garam masala
  • a pinch of salt
  • a pinch of pepper
  • 2 tbsp almond milk (or other non-dairy milk alternative)
  • 1/2 tsp coconut oil

Preparation

  1. Wash and grate 1 large carrot. Squeeze out as much excess liquid as possible.

  2. In a large bowl, mix the grated carrot with 125g Merchant Gourmet Puy Lentils, 1 tbsp plain flour, 1 tsp garam masala, a pinch each of salt and pepper, and 2 tbsp almond milk until well combined.

  3. Heat a frying pan with 1/2 tsp coconut oil, then spoon in the mixture, using 1 tbsp per fritter.

  4. Cook on each side for 3-4 minutes, or until golden and crispy, then serve with chopped coriander and drizzled over tahini.
