Spicy Cheesy Tuna Boats for Lunch
Ingredients
- Zucchini
- 3 cans of Portofino tuna (4.5 oz each)
- 1/4 cup mayonnaise
- 1/4 cup relish
- 2 tablespoons sriracha
- 1/4 cup chopped red onion
- 2 tablespoons chopped jalapeno
- 1/2 teaspoon salt
- 1 cup cheddar cheese
Preparation
Cut zucchini in half and scoop out the middles.
Bake at 400 degrees Fahrenheit for 15 minutes.
Meanwhile, in a large bowl, add 3 cans of Portofino tuna (4.5 oz each), mix with 1/4 cup mayonnaise, 1/4 cup relish, 2 tablespoons sriracha, 1/4 cup chopped red onion, 2 tablespoons chopped jalapeno, and 1/2 teaspoon salt.
Stir to combine.
Add the mixture into the zucchinis and top with cheese (about 1 cup cheddar).
Bake for an additional 5 minutes.
