Spicy Cheesy Tuna Boats for Lunch

Ingredients

  • Zucchini
  • 3 cans of Portofino tuna (4.5 oz each)
  • 1/4 cup mayonnaise
  • 1/4 cup relish
  • 2 tablespoons sriracha
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped jalapeno
  • 1/2 teaspoon salt
  • 1 cup cheddar cheese

Preparation

  1. Cut zucchini in half and scoop out the middles.

  2. Bake at 400 degrees Fahrenheit for 15 minutes.

  3. Meanwhile, in a large bowl, add 3 cans of Portofino tuna (4.5 oz each), mix with 1/4 cup mayonnaise, 1/4 cup relish, 2 tablespoons sriracha, 1/4 cup chopped red onion, 2 tablespoons chopped jalapeno, and 1/2 teaspoon salt.

  4. Stir to combine.

  5. Add the mixture into the zucchinis and top with cheese (about 1 cup cheddar).

  6. Bake for an additional 5 minutes.
