Sunshine Nourish Bowl with Hummus

Ingredients

  • Potatoes
  • Dukkah spice
  • Broccoli
  • Sizzling pepper blend
  • Delicata squash
  • Garlic
  • Brussels sprouts
  • Lemon pepper seasoning
  • Edamame
  • Golden beets

Hummus

  • 1 cup chickpeas
  • 1 cup dandelion greens
  • 1/4 cup Chinese chives or 1/8 cup regular chives
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 jalapeno pepper (optional)
  • 1/2 tsp garlic powder
  • 1 tsp salt

Preparation

  1. Air fry potatoes seasoned with dukkah spice until crispy.

  2. Season broccoli with sizzling pepper blend and cook until tender.

  3. Oven roast delicata squash with garlic until soft.

  4. Cook brussels sprouts with lemon pepper seasoning until browned.

  5. Steam golden beets until fork-tender.

  6. Prepare edamame according to package instructions.

  7. Assemble all components in a bowl along with hummus.

Hummus

  1. Combine all hummus ingredients in a high speed blender and pulse until smooth and creamy.

  2. Top with more chives and enjoy immediately or refrigerate for up to 5 days.
