Sweet Potato Pie for Thanksgiving

Ingredients

  • 2 cups sweet potato purée (can use canned pumpkin instead)
  • 1 cup coconut cream
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar or sweetener of choice
  • 1/4 cup cornstarch
  • 2 teaspoons vanilla
  • 2 teaspoons allspice
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 raw pie crust (store-bought)

Preparation

  1. Mix all ingredients until you get an even consistency.

  2. Pour the mixture into a raw pie crust.

  3. Bake at 350°F for 50-60 minutes.
