Sweet Potato Pie for Thanksgiving
Ingredients
- 2 cups sweet potato purée (can use canned pumpkin instead)
- 1 cup coconut cream
- 1/4 cup maple syrup
- 1/2 cup coconut sugar or sweetener of choice
- 1/4 cup cornstarch
- 2 teaspoons vanilla
- 2 teaspoons allspice
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 raw pie crust (store-bought)
Preparation
Mix all ingredients until you get an even consistency.
Pour the mixture into a raw pie crust.
Bake at 350°F for 50-60 minutes.
