Vegan Sweet Potato Casserole with Pecan Topping
Ingredients
- 2 large sweet potatoes
- 1/4 cup coconut milk
- 2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Pecan topping
- 1/2 cup pecans
- 2 tablespoons coconut oil
- 2 tablespoons coconut sugar
Preparation
Preheat oven to 375 degrees Fahrenheit
Peel and cube the sweet potatoes
Boil the sweet potatoes until tender, then drain
Mash the sweet potatoes until smooth
Stir in coconut milk, maple syrup, cinnamon, nutmeg, and salt
Transfer the sweet potato mixture to a baking dish
Chop the pecans
Melt the coconut oil
In a small bowl, combine the chopped pecans, melted coconut oil, and coconut sugar
Sprinkle the pecan mixture evenly over the sweet potato base
Bake for 20 to 25 minutes until the topping is golden
Let cool for 5 minutes before serving
