Vegan Linguine with Caramelized Onions

Ingredients

  • 2-3 tablespoons olive oil
  • 4 medium yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • Big pinch chili flakes
  • Handful cherry tomatoes
  • Handful chestnut mushrooms
  • 1 can navy beans, rinsed well
  • Handful fresh basil, roughly chopped
  • Handful spinach
  • Handful sprouts
  • 1/4 cup vegan butter
  • Sea salt and cracked pepper
  • Vegan Parmesan
  • linguine

Preparation

  1. Cook pasta and reserve 1/2 cup water.

  2. Add olive oil to a large pan over medium heat.

  3. Once oil is hot, add onions and cook over medium-low heat for approximately 30 minutes, stirring frequently.

  4. Add garlic to softened onions and season with salt and cracked pepper.

  5. Add mushrooms and 2 tablespoons butter, then cook until mushrooms start to soften.

  6. Add cherry tomatoes and beans, then cook until heated through.

  7. Add spinach, sprouts, pasta, and remaining 2 tablespoons butter.

  8. Season again and toss well.

  9. Serve with vegan Parmesan, more sprouts, and chili flakes.
