Vegan Sesame Tofu Stir-Fry

Ingredients

  • 1 block of firm tofu
  • 2 tablespoons of sesame oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of cornstarch
  • 2 tablespoons of canola oil
  • 1 bell pepper (sliced)
  • 1 small onion (sliced)
  • 2 cloves of garlic (minced)
  • 1 small carrot (julienned)
  • 2 tablespoons of sesame seeds
  • 2 green onions (sliced)

Preparation

  1. Press the tofu to remove excess water, cut into cubes, and coat with cornstarch

  2. Heat canola oil in a large skillet or wok over medium-high heat

  3. Add the tofu cubes and cook until golden brown on all sides, then remove and set aside

  4. In the same skillet, add sesame oil and sauté garlic, onion, bell pepper, and carrot until vegetables are tender-crisp

  5. Return the tofu to the skillet, add soy sauce, and stir-fry everything together until well combined and heated through

  6. Sprinkle with sesame seeds and green onions, then serve immediately
