Vegan Spaghetti Bolognese with Tofu and Tomatoes

Ingredients

  • 200g tofu mince
  • Dash red wine
  • 1 can chopped tomatoes
  • 500g tomatoes on the vine
  • 3tb tomato puree
  • 2 onions
  • 1 garlic clove
  • 3tb olive oil
  • salt, pepper
  • A handful of fresh Basil
  • Oregano, parsley and other herbs
  • 3tbs soy sauce
  • 500g Spaghetti

Preparation

  1. Optionally, top the dish with cashew parmesan or add more veggies as desired.

  2. Chop the garlic, onions and tomatoes

  3. Roast onions and garlic in a pan with olive oil

  4. Crumble up your minced tofu and add it to the pan

  5. Add tomatoes and tomato puree

  6. Deglaze with the can of tomatoes

  7. Spice with salt, pepper, herbs, soy sauce and red wine

  8. Let simmer for 15-20 minutes

  9. Cook your pasta

  10. Add the fresh basil to your sauce (keep some for decoration)

  11. Taste the flavour and perhaps add more spice or red wine

  12. Serve with basil on top
