Vegan Tofu Scramble with Veggies and Spices

Ingredients

  • onions
  • mushrooms
  • broccoli (optional)
  • 1/2 block tofu
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 tablespoon plant milk (e.g., cashew)
  • spinach
  • sprouted rye toast
  • avocado

Preparation

  1. Sauté onions and mushrooms in a pan until soft and translucent, then add any other pre-cooked veggies like broccoli to reheat.

  2. Crumble 1/2 block of tofu into the pan and stir/cook for 3-5 minutes with the lid off.

  3. Add 1 tablespoon nutritional yeast, 1/4 teaspoon turmeric, 1/2 teaspoon paprika, and 1/4 teaspoon salt; stir and cook for 5 minutes.

  4. Add 1 tablespoon of plant milk and stir/cook for 2 minutes.

  5. Add spinach at the end to wilt.

  6. Serve with sprouted rye toast and avocado. Note: Do not press the tofu beforehand, just drain the liquid.
