Vegan Tofu Scramble with Veggies and Spices
Ingredients
- onions
- mushrooms
- broccoli (optional)
- 1/2 block tofu
- 1 tablespoon nutritional yeast
- 1/4 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1 tablespoon plant milk (e.g., cashew)
- spinach
- sprouted rye toast
- avocado
Preparation
Sauté onions and mushrooms in a pan until soft and translucent, then add any other pre-cooked veggies like broccoli to reheat.
Crumble 1/2 block of tofu into the pan and stir/cook for 3-5 minutes with the lid off.
Add 1 tablespoon nutritional yeast, 1/4 teaspoon turmeric, 1/2 teaspoon paprika, and 1/4 teaspoon salt; stir and cook for 5 minutes.
Add 1 tablespoon of plant milk and stir/cook for 2 minutes.
Add spinach at the end to wilt.
Serve with sprouted rye toast and avocado. Note: Do not press the tofu beforehand, just drain the liquid.
