Vegan White Chocolate Rocky Road
Ingredients
- 1 cup cacao butter buttons
- 1 cup cashews
- 2 tablespoons melted coconut oil
- 2 tablespoons maple syrup
- 1 tablespoon dark chocolate chips
- 1 teaspoon vanilla
Toppings
- 1/2 cup pistachios
- 1/2 cup raspberries
- 1/3 cup pumpkin seeds
- other toppings of your choice
Preparation
Melt the cacao butter buttons in a saucepan on low heat.
Once melted, combine the cacao butter with the cashews, vanilla, coconut oil and maple syrup in a blender. Blend on high until smooth and creamy.
Pour into a square tin lined with baking paper.
Top with all the toppings and store in the freezer to set for 30 minutes.
