Vegan White Chocolate Rocky Road

Ingredients

  • 1 cup cacao butter buttons
  • 1 cup cashews
  • 2 tablespoons melted coconut oil
  • 2 tablespoons maple syrup
  • 1 tablespoon dark chocolate chips
  • 1 teaspoon vanilla

Toppings

  • 1/2 cup pistachios
  • 1/2 cup raspberries
  • 1/3 cup pumpkin seeds
  • other toppings of your choice

Preparation

  1. Melt the cacao butter buttons in a saucepan on low heat.

  2. Once melted, combine the cacao butter with the cashews, vanilla, coconut oil and maple syrup in a blender. Blend on high until smooth and creamy.

  3. Pour into a square tin lined with baking paper.

  4. Top with all the toppings and store in the freezer to set for 30 minutes.
