Chickpea and Brown Rice Fritters

Ingredients

  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 1 can no salt added chickpeas
  • 1 cup cooked brown rice
  • 1 egg or flax-seed egg replacement, if vegan
  • salt and pepper, to taste
  • olive oil, for frying
  • fresh parsley and basil pesto, for serving

Preparation

  1. Heat oil in a frying pan and add onions. Cook for 5 minutes or until golden brown, then set aside.

  2. Mash chickpeas in a mixing bowl with fork.

  3. Add in onions, brown rice and egg or flax-seed egg replacement. Season to taste and mix until the mixture is well combined and sticky.

  4. Form fritters with your hands and fry for about 3 minutes on both sides until golden brown.

  5. Serve immediately with fresh parsley and pesto.
