Chickpea and Brown Rice Fritters
Ingredients
- 1 tablespoon olive oil
- 1 small white onion, finely chopped
- 1 can no salt added chickpeas
- 1 cup cooked brown rice
- 1 egg or flax-seed egg replacement, if vegan
- salt and pepper, to taste
- olive oil, for frying
- fresh parsley and basil pesto, for serving
Preparation
Heat oil in a frying pan and add onions. Cook for 5 minutes or until golden brown, then set aside.
Mash chickpeas in a mixing bowl with fork.
Add in onions, brown rice and egg or flax-seed egg replacement. Season to taste and mix until the mixture is well combined and sticky.
Form fritters with your hands and fry for about 3 minutes on both sides until golden brown.
Serve immediately with fresh parsley and pesto.
