Loaded Sweet Potato with Hot Honey

Ingredients

  • 2 large sweetpotatoes
  • 1 tbsp oil
  • 50g TVP mince
  • 1/2 onion, diced
  • 1 large garlic clove, crushed
  • 2 tsps taco seasoning
  • 150-200ml veg stock

Toppings

  • Greek yoghurt
  • avocado
  • hot honey
  • cherry tomatoes
  • coriander
  • pickled onions

Hot honey

  • 170g honey
  • 1-2 tsps chilli flakes

Preparation

  1. Prick the sweet potatoes, rub with a bit of oil, season with salt, and bake in an air fryer at 200°C for 35-40 minutes.

  2. Heat oil in a pan and fry the onion.

  3. Add garlic and TVP mince to the pan.

  4. Add taco seasoning and fry for a few minutes.

  5. Add vegetable stock and simmer for 5-10 minutes until the liquid is absorbed.

  6. Top the baked sweet potatoes with Greek yoghurt, pickled onions, avocado, hot honey, chopped cherry tomatoes, coriander, salt, black pepper, and a squeeze of lemon.

Hot honey

  1. Simmer honey with chilli flakes for 1-2 minutes, then transfer to a jar and let it infuse.

Notes

  1. Each serving provides over 20g protein and 15g fiber, sourced mainly from sweet potatoes which are rich in vitamin A and C and have a low glycemic index.

  2. North Carolina is the leading sweet potato producing state and a primary source for UK imports.
