Loaded Sweet Potato with Hot Honey
Ingredients
- 2 large sweetpotatoes
- 1 tbsp oil
- 50g TVP mince
- 1/2 onion, diced
- 1 large garlic clove, crushed
- 2 tsps taco seasoning
- 150-200ml veg stock
Toppings
- Greek yoghurt
- avocado
- hot honey
- cherry tomatoes
- coriander
- pickled onions
Hot honey
- 170g honey
- 1-2 tsps chilli flakes
Preparation
Prick the sweet potatoes, rub with a bit of oil, season with salt, and bake in an air fryer at 200°C for 35-40 minutes.
Heat oil in a pan and fry the onion.
Add garlic and TVP mince to the pan.
Add taco seasoning and fry for a few minutes.
Add vegetable stock and simmer for 5-10 minutes until the liquid is absorbed.
Top the baked sweet potatoes with Greek yoghurt, pickled onions, avocado, hot honey, chopped cherry tomatoes, coriander, salt, black pepper, and a squeeze of lemon.
Hot honey
Simmer honey with chilli flakes for 1-2 minutes, then transfer to a jar and let it infuse.
Notes
Each serving provides over 20g protein and 15g fiber, sourced mainly from sweet potatoes which are rich in vitamin A and C and have a low glycemic index.
