Easy Vegan Cacao Sweet Potato Pancakes

Ingredients

  • 1 small sweet potato (boiled and peeled)
  • 1 flax egg (1 tbsp flax meal + 2 tbsp water)
  • 1/2 cup unsweetened coconut milk
  • 1/2 tsp organic vanilla extract
  • 2 tbsp nut butter (e.g., almond butter)
  • 1 tbsp coconut flour
  • 1/2 tbsp raw cacao nibs
  • 1/2 tbsp coconut oil (for cooking)
  • coconut flakes (for topping)

Preparation

  1. Mash sweet potato with flax egg and coconut milk.

  2. Add 1 tbsp nut butter, vanilla extract, coconut flour, and cacao nibs.

  3. Mix together and add more coconut milk if the batter is too thick.

  4. Heat 1/2 tbsp coconut oil in a medium skillet and spoon in the batter.

  5. Flip until nicely browned on each side; this makes about two small cakes.

  6. Top with remaining nut butter, coconut flakes, and a few more cacao nibs.

  7. Optionally, serve with strawberry, mint, and lemon water for added refreshment.
