Easy Vegan Cacao Sweet Potato Pancakes
Ingredients
- 1 small sweet potato (boiled and peeled)
- 1 flax egg (1 tbsp flax meal + 2 tbsp water)
- 1/2 cup unsweetened coconut milk
- 1/2 tsp organic vanilla extract
- 2 tbsp nut butter (e.g., almond butter)
- 1 tbsp coconut flour
- 1/2 tbsp raw cacao nibs
- 1/2 tbsp coconut oil (for cooking)
- coconut flakes (for topping)
Preparation
Mash sweet potato with flax egg and coconut milk.
Add 1 tbsp nut butter, vanilla extract, coconut flour, and cacao nibs.
Mix together and add more coconut milk if the batter is too thick.
Heat 1/2 tbsp coconut oil in a medium skillet and spoon in the batter.
Flip until nicely browned on each side; this makes about two small cakes.
Top with remaining nut butter, coconut flakes, and a few more cacao nibs.
Optionally, serve with strawberry, mint, and lemon water for added refreshment.
