Peanut Butter Coconut Flour Cookies
Ingredients
- 1/2 cup smooth peanut butter
- 2 tablespoons coconut oil
- 1/2 cup brown sugar or coconut sugar
- 2 medium eggs (at room temperature)
- 1 tsp vanilla extract
- 1/2 tsp bicarbonate of soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/2 cup coconut flour
- 1/2 cup chocolate chips
Preparation
Preheat your oven to 180C and line a baking sheet with baking paper
Put the peanut butter, coconut oil, sugar, eggs and vanilla in a large bowl and mix together using a hand blender. Food processor also works. Mix till combined.
Add in all remaining ingredients except the chocolate chips and blend again till you have a smooth dough. You might need to scrape down the sides of your bowl a couple of times to make sure it’s fully incorporated.
Add in the chocolate chips and fold into the dough. Hands work best for this.
Use a spoon to take dough from the bowl, make a ball and then flatten slightly into a chunky cookie.
Place on your baking sheet (you can go quite close together as they don’t spread much)
Bake for 7 minutes or until the cookies go slightly golden brown at the edges. Leave them on the baking tray for a couple of minutes and then transfer to a wire rack till fully cooled.
