Vegan Banana Bread Pancakes with Cinnamon
Ingredients
- 1/2 cup buckwheat flour
- 1 heaped tablespoon coconut flour
- 1/2 teaspoon baking powder
- 1/2 large banana
- 3 tablespoons coconut yogurt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1 tablespoon coconut or almond butter
- almond milk as needed
Preparation
Mash the banana.
Combine all ingredients to form a thick batter.
Cook over medium heat on a greased pan until edges are opaque.
Flip and cook for 1-2 minutes.
Serving suggestions
Stack with espresso cacao soy yogurt, agave syrup, cacao nibs, coconut, and flaked almonds.
