Vegan Banana Bread Pancakes with Cinnamon

Ingredients

  • 1/2 cup buckwheat flour
  • 1 heaped tablespoon coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 large banana
  • 3 tablespoons coconut yogurt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1 tablespoon coconut or almond butter
  • almond milk as needed

Preparation

  1. Mash the banana.

  2. Combine all ingredients to form a thick batter.

  3. Cook over medium heat on a greased pan until edges are opaque.

  4. Flip and cook for 1-2 minutes.

Serving suggestions

  1. Stack with espresso cacao soy yogurt, agave syrup, cacao nibs, coconut, and flaked almonds.
