Smashed Sweet Potato Salad
Ingredients
- 2 medium sweet potatoes
- Oil
- Salt
- Black pepper
- 1 cup curd
- Chopped tomatoes
- Chopped cucumber
- Chopped onion
- Green chillies
- Fresh coriander
- Pomegranate seeds
- Roasted cumin powder
- Fresh lemon juice
- White sesame seeds
Preparation
Boil 2 medium sweet potatoes in a pressure cooker for up to 3 whistles.
Peel and cut the sweet potatoes into round pieces, then smash them using a glass or katori.
Apply some oil on the smashed sweet potatoes.
Sprinkle some salt and pepper on the smashed potatoes.
Roast the smashed sweet potatoes on both sides on a tawa over low to medium heat until golden and crispy.
Toast the white sesame seeds in a dry pan until golden brown.
Take 1 cup of curd in a bowl.
Add chopped tomatoes, cucumber, onion, green chillies, coriander, and pomegranate to the curd.
Add salt, roasted cumin powder, and fresh lemon juice to the mixture.
Mix everything well.
For serving, place the curd mixture on a plate and top with the crispy smashed sweet potatoes.
Sprinkle pomegranate seeds, fresh coriander, and toasted white sesame seeds over the top.
Mix everything well and enjoy the salad.
