Weight Loss Sweet Potato Snack
Ingredients
- 2 medium sweet potatoes
- Oil or ghee for roasting
Dressing
- Zest of 1 lemon
- Juice of 1 lemon
- 1.5 tablespoons honey or a small piece of jaggery
- 2 teaspoons olive oil
- Pinch of chili flakes
- Salt to taste
- 1 tablespoon roasted white sesame seeds
Toppings
- Feta cheese
- Pomegranate seeds
Preparation
In a pressure cooker, boil the sweet potatoes on medium flame for up to 3 whistles.
Once cooled, cut the sweet potatoes into thick pieces.
Mix the zest of 1 lemon, the juice of 1 lemon, 1.5 tablespoons honey or a small piece of jaggery, 2 teaspoons olive oil, a pinch of chili flakes, salt, and 1 tablespoon roasted white sesame seeds in a bowl and set aside.
Heat a pan and add some oil or ghee, then roast the sweet potato pieces until golden brown.
Turn off the heat, pour in the dressing, and mix until the sweet potatoes are well coated.
Serve topped with crumbled feta cheese and pomegranate.
