Triple Treat Oatmeal Bowl

Ingredients

Oatmeal

  • 1/2 cup gluten free rolled oats
  • 1 teaspoon cinnamon
  • 3/4 cup water

Chia pudding

  • 2 tablespoons chia seeds
  • 1 teaspoon butterfly pea powder
  • 1 tablespoon maple syrup
  • 1 1/4 cups oat milk

Toppings

  • 1/2 cup plain yogurt
  • blueberry compote
  • currants
  • 1 date filled with peanut butter
  • cocoa nibs
  • hemp seeds

Preparation

  1. Simmer the oatmeal ingredients with cinnamon and water until a creamy consistency is achieved.

  2. Mix chia seeds, butterfly pea powder, maple syrup, and oat milk together; let it sit for 10-15 minutes to thicken.

  3. In a bowl, assemble by combining the oatmeal, chia pudding, and yogurt; then add blueberry compote, currants, date filled with peanut butter, cocoa nibs, and hemp seeds.
