Spring Armenian Cauliflower Salad

Ingredients

  • 1.5 heads cauliflower
  • 1/2 cup dried cranberries
  • 1 cup chives
  • 1/2 cup cashews
  • mint

Preparation

  1. Pulse the cauliflower to a rice-like texture.

  2. Toast and chop the cashews.

  3. Slice the mint.

  4. Combine all ingredients in a bowl and mix well.

  5. Serve as a side salad.
