Fresh Peach and Halloumi Salad with Mint and Chili
Ingredients
- A shallot
- Fresh lemon or lime juice
- Salt
- Olive oil
- A few slices of halloumi
- Some cherry tomatoes
- A doughnut peach
- Creamy butter beans
- A red hot chili
- Fresh mint leaves
- Honey
- Flaky salt
- Optional citrus zest
Preparation
Thinly slice a shallot and let it sit in fresh lemon or lime juice along with some salt.
Fry a few slices of halloumi in a tiny splash of olive oil until golden on both sides.
Slice some cherry tomatoes and a doughnut peach, then arrange them on a plate along with the halloumi and some butter beans.
Finely slice or dice a red hot chili and some fresh mint leaves.
Garnish the tomatoes, peaches, halloumi, and beans with the shallot rings, mint, and chili, then season the tomatoes generously with flaky salt.
Spoon the lemon or lime juice from the shallots over everything, then drizzle honey across the plate.
Finish with a trickle of olive oil and optional citrus zest, then enjoy.
