Hearts of Palm Ceviche

Ingredients

  • 1 can diced hearts of palm
  • 1/2 cup diced tomatoes
  • 1-2 finely diced jalapeños
  • 1/3 cup finely chopped red onion
  • 1/2 chopped avocado
  • 1/3 cup chopped fresh cilantro
  • Juice of 1 lime
  • Juice of 1 orange
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Preparation

  1. In a large bowl, add the chopped hearts of palm, red onion, jalapeño, tomato, avocado, and cilantro and mix well.

  2. Add the citrus juices, salt, and pepper and mix well.

  3. Refrigerate for at least 30 minutes to 1 hour to let the flavors blend.

  4. Serve with plantain or tortilla chips.
