Baked Pancake Parcels with Spinach and Cheese

Ingredients

  • 1 pancake or crepe
  • Spinach
  • 3 portions Dairylea light cheese
  • A few slices vegetarian pastrami
  • 1 golden yolker egg
  • 20g grated mozzarella cheese
  • Peashoot
  • Sea salt
  • Chives
  • Chilli flakes

Preparation

  1. Partially fry the golden yolker egg

  2. Fill the pancake with layers of spinach, Dairylea light cheese, and slices of vegetarian pastrami

  3. Top the filled pancake with the partially fried egg

  4. Fold the pancake and secure with cocktail sticks

  5. Sprinkle with grated mozzarella cheese

  6. Bake on high heat for 5 to 6 minutes

  7. Mix peashoot with sea salt, chives, and chilli flakes to prepare the salad
