Breakfast Avocado Egg Cups
Ingredients
- 1 ripe avocado
- 2 small eggs
- Salt
- Black pepper
Preparation
Preheat oven to 400°F (200°C).
Slice avocado in half and remove the pit. Scoop a little extra flesh to make room for the egg.
Place avocado halves in a baking dish (use foil to stabilize if needed).
Crack one egg into each half. Season with salt and pepper.
Bake for 15-17 minutes, until the egg white is set. Top with your favorite toppings and enjoy.
