Breakfast Avocado Egg Cups

Ingredients

  • 1 ripe avocado
  • 2 small eggs
  • Salt
  • Black pepper

Preparation

  1. Preheat oven to 400°F (200°C).

  2. Slice avocado in half and remove the pit. Scoop a little extra flesh to make room for the egg.

  3. Place avocado halves in a baking dish (use foil to stabilize if needed).

  4. Crack one egg into each half. Season with salt and pepper.

  5. Bake for 15-17 minutes, until the egg white is set. Top with your favorite toppings and enjoy.
