Coconut Milk Rice Pudding with Raspberry Sauce

Ingredients

Rice pudding

  • 125g rice pudding grains
  • 500ml coconut milk
  • 2 tbsp coconut milk powder
  • 1 tbsp agave syrup
  • 1/2 teaspoon ground vanilla
  • 1 tbsp coconut flakes
  • 2 tbsp vegan coconut yogurt

Raspberry sauce

  • 100g frozen raspberries
  • 1 teaspoon agave syrup

Preparation

Rice pudding

  1. Mix all ingredients except the yogurt in a saucepan, bring to the boil briefly and let soak over low heat for 25-30 minutes.

  2. Then mix in the yogurt.

Raspberry sauce

  1. Bring to the boil in a small pan and pour over the rice pudding.
