Coconut Milk Rice Pudding with Raspberry Sauce
Ingredients
Rice pudding
- 125g rice pudding grains
- 500ml coconut milk
- 2 tbsp coconut milk powder
- 1 tbsp agave syrup
- 1/2 teaspoon ground vanilla
- 1 tbsp coconut flakes
- 2 tbsp vegan coconut yogurt
Raspberry sauce
- 100g frozen raspberries
- 1 teaspoon agave syrup
Preparation
Rice pudding
Mix all ingredients except the yogurt in a saucepan, bring to the boil briefly and let soak over low heat for 25-30 minutes.
Then mix in the yogurt.
Raspberry sauce
Bring to the boil in a small pan and pour over the rice pudding.
