Colorful Superfood Pancakes
Ingredients
- 250g flour
- Pinch of salt
- 10g baking powder
- 1 tbsp sweetener of choice
- 150g Greek yogurt or coconut yogurt
- 1 tsp pink pitaya powder
- 1 tsp acai berry powder
- 250ml milk
- 2 tsp vanilla
Preparation
In a mixing bowl, combine the flour, salt, and baking powder.
Add the sweetener, Greek yogurt (or coconut yogurt), pink pitaya powder, and acai berry powder to the bowl.
Pour in the milk and add the vanilla extract.
Use a whisk to thoroughly mix all the ingredients together until you have a smooth batter.
Divide the batter evenly into two separate bowls.
Heat a non-stick pan or griddle over medium heat.
Pour a ladleful of the pink pitaya pancake batter onto the pan, forming a round pancake.
Similarly, pour a ladleful of the acai berry pancake batter onto the pan to make another pancake.
Cook the pancakes until bubbles form on the surface and the edges start to look cooked.
Flip the pancakes and cook for another 1-2 minutes, or until the other side is golden brown.
Repeat the cooking process with the remaining batter, making additional pancakes.
Serve the colorful superfood pancakes warm and enjoy!
