Cup of Baked Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/3 cup coconut milk plus 3 Tbsp non-dairy milk
  • 1 Tbsp cacao powder
  • 1 Tbsp almond butter
  • 1 Tbsp milled flaxseed
  • 1 Tbsp maple syrup
  • Little pinch of salt (optional)
  • 1/2 banana
  • 1/2 tsp baking powder
  • 1 chunk of vegan or dark chocolate (optional)

Optional toppings

  • Sliced banana
  • Chia seeds
  • A drizzle of almond butter
  • A drizzle of maple syrup

Preparation

  1. To the mug, add the banana and mash it well with a fork

  2. Add the oats, flaxseed, and cacao powder and mix them together

  3. Add the almond butter, maple syrup, baking powder, salt, and coconut milk and mix well until all combined. Add the chocolate chunk if using in the center and press it down

  4. Place in the microwave for 3 minutes. Check after 2 minutes and continue if needed

Optional toppings

  1. Add sliced banana

  2. Add chia seeds

  3. Add a drizzle of almond butter

  4. Add a drizzle of maple syrup
